I work as a meat cutter, and this knife is my workhorse. Small enough to remove silverskin and get around bone, and big enough to cut chops, ribs, and filets. Sure a bigger or smaller specialized knife might do a better job, but if you are good enough with this knife, loss of quality of cuts is negligible. Also you don't have to switch knives as much.As described, it is not a flexible blade. Razor sharp out of the box. I cut ribbons of paper just to see. Slip resistant handle is comfortable for different grips and maneuvering. And for ~$20, it's a fantastic deal. Fantastic knife, regardless of the price.

Perfection...
This blade is scary sharp and is an outstanding boning knife. I use it for processing deer and I have even used it, in a pinch, to actually skin a deer. Not the best skinning knife, but did ok. Great for retrieving the back strap and tenderloins in one piece. I deboned four deer last year without resharpening. Now, granted, I was VERY careful not to hit bone while deboning the flesh. As with any blade, hit bone = resharpen. Great working blade. Hope this helps someone.Update: After rereading my review i need to clarify something. I did NOT have to sharpen this blade after deboning 4 deer but I did give it a few strokes on my honing steel in between deer. That's normal, still an excellent blade.

5stars. It’s like a whole new world opened up for me. This knife is incredibly sharp and easy to use. I thought the handle was a bit bulky but after using it a few times I can see why. The larger handles makes it easy to maneuver the knife around the chicken.Update: after 3 uses the blade is dull. I’m not sure if I could’ve cut chicken bones by accident and made it dull, but it’s not as sharp only after third use.

Sharp and great to handle
I'm a cutting apprentice and cut for atleast 4hrs. Handles great and a little steeling now and then keeps this lil knife chugging along. Would suggest this for any beginner atleast or someone that cuts a bit at home. For work (if i was to nit pic) I should have gotten the 10" as I'd get more versitility out of it for me. Gives you a little flex. I may actually look at that 10" hmmmmmm

This is the standard.
Every good youtube vid I watched of butchering deer had this knife in use. My neighbor had one and we butchered a deer using it, and I had to have one. This is the standard for butchering/deboning game. I love this knife.

Just buy it
The best knife in my kitchen for maneuvering around meat. I use another knife for chopping through bones, but for everything else meat related, I pull this knife out of the block.

razor sharp and stays that way
these have replaced all my old "go to" knives for homestead meat processing. this one knife handled 3 bear 2 deer 6 turkey a pig, ram and 2 dozen chickens this year without needing sharpening.just a few swipes on the steel and keep going.

Sharp and Durable
This is a great boning knife. It is extremely sharp and has been effective on ribs with getting that back layer off the back of the ribs, trimming fat on a pork butt as well as trimming fat from a brisket. Great price that won’t break the bank.

Have used Victorinox knives for years
Very comfortable use it for all deboning including hunting, also most versatile knife for all general use even around the Kitchen, Have spent 100s $ on other knives but reach for this first , hobby butcher !!
