Q: Would this fit on a Weber 57cm kettle BBQ and let you have the lid down?

It would work as a griddle, but not really designed for a Weber 57cm, as this diameter is smaller, so you could sit it on the Weber cooking grate and griddle, ideally you need a Weber specific griddle - sorry

I dont see why not, there is nothing specific about it that makes it a kamado specific item. The dimensions are generic. My question would not be would this fit , it would be where do I get a weber cast iron hot plate. From my experience everything Kamado is over priced. But put simply, it should fit.
