Would a cat be able to knock this down really easily?

My cat has knocked this off the table twice. Both times it broke. First time I glued it back together, now I might just buy a plastic cup to replace it.

Are there refills available for the seeds and soil or do I need to buy a new cup every time?

The first instruction says to add soil contents. Is that the little dirt puck that came with it or do i need to go get more soil?

Yes, the little "puck" is the soil. You place it in the cup and moisten it/loosen it. Then you put the seeds in, after removing about a tbsp. of soil off the top, then patting it over the seeds. Cover for a day or two with plastic wrap while keeping in dark place. Then uncover and place where it will get sunlight. Sprouts should come up within a few days.

If mold does occur should i start over and re-pot?

I wouldn't. The key is not to over water in the first place, but if you see mold start to develop, scrape off as much as you can; then try one of the following: sprinkle a Little ground cinnamon just around the top of the soil, or try hydrogen peroxide mixed 1 to 9 parts water and gently spray a very little each day JUST on the soil; not the grass.
