This is a great way to get next level sharpness. Much easier to use than a traditional hanging strop. Comes with a green compound that you add to the leather. It sharpens and polishes the bevel on your blade. This is my final step. (Steel, sharpen, strop!) The leather surface is 3" x 8". This is much wider than a traditional strop. This design is nicely mounted on a 1" thick wood block. The bottom surface has 4 non-skid pegs that make it practical for countertop use. The additional size of the design works very nicely on the oversized chef knives and cleavers that are common among culinary artists. This would make a great gift for a chef, outdoorsman, or a collector of fine cutlery.

Sharpening any cutting tool is a skill that takes practice and, like the tools themselves, takes quality sharpening equipment. My hand is not as skilled as it use to be and so I have been using The Lansky Sharpening system to establish consistent angles on my blades, but those only go just so far. A leather strop to finish off an edge makes a big difference. After losing all my tools in a fire I needed to start over. I got the Lansky system again but needed to replace my old leather strop. I choose the single-sided Hutsuls Leather Strop Block. Among the other items I recently purchased was a really good set of kitchen knives. They aren't the professional level cutting tools that some get where a single chef's knife can cost $300 or more, but I still paid about $400 iirc to create a versatile set of seven knives plus a steel. But like all fine knives they needed sharpening when they arrived. One of the knives was an identical replacement of a santoku vegetable cleaver. After a good sharpening I honed the edge with the Hutsuls leather strop and green compound. While I would not attempt to actually shave with it, I was able to remove a small amount of arm hair with it when I finished. To hone the knife I applied a small amount of the green compound over a large area and then used a tiny bit of olive oil as recommended in the instructions, after the first few strokes the compound spread out sufficiently. I sharpened the entire set of knives and honed them with the Hutsul strop all in a similar manner and will say they are as sharp or sharper than any such knives I have ever used. How sharp? I have been married for 50 years now. My wife has always been afraid of using any of my sharp pocket knives and more recently she feared the vegetable cleaver I had. Now, with all new knives in the kitchen she had to get over her fears and learn how to use these new, very sharp knives. I gave her a talk about sharp vs. dull and the use of less force to create control: it was the "Let the Tool Do the Work," lesson #1. I talked her through the first three or four times she used the newly sharpened knives, discussing hand and finger placement, proper lighting, choosing the right tool for the job, and such. She now uses the knives regularly and no blood has been shed which I cannot say about her use of the old knives. She even let me discard the old, low quality (dare I say junk) knives she had been using. You force cheap, dull knives. You guide quality, sharp knives. Product arrived in great time and in great shape I’ve used it 20 times and seems to get better the more you use it It’s great for taking the bur off of soft metal things like scissors
