Q: why does it say no added sugars in one place and three grams of added sugar in another? That's very confusing.

It is certainly confusing as well as complicated! Simply put, enzymes are added to convert starches into sugars to increase sweetness. Your saliva plays the same role in digestion and would do the same thing. Is sugar added? No, but there are more immediately available sugars than if were straight dehydrated oat milk. Worth noting: Oatly does this too with their liquid oat milk.

Q: How much powder is needed to make an 8 ounce serving?

2-3 T or 26 grams is what I use. I don’t personally recommend using this to make a cup of oat milk to drink plain. It’s not what it is intended for. Use mixed into coffee or in baked goods.

I don’t know because I purchased it to use as a non-dairy creamer for traveling purposes. I wasn’t thrilled with it as a coffee creamer

Q: Does anyone know what, if anything, I can add to this milk so that it will “froth” - to make a latte?

All regular milk will froth. Steaming the milk is the go-to way to do this as it creates a finer foam and heats the milk at the same time. You can also shake the milk carton vigorously to get foam or buy one of the neat milk-foaming devices. Plant based milk is a different deal though. Many store bought ones have oils and enzymes added to aid in foaming. I haven’t tried adding this to fresh nut milks but it might work. I’d first try adding 1t of oil to 1 liter of whatever milk I’d be steaming. If it doesn’t work I’d add up to 3t. If you insist on adding this oat milk powder, I’d try out 1T to 1 liter and increase from there.
