Weekly, I bake four 20 ounce loaves of rosemary 1/3 whole wheat sesame sourdough with this WHOLE DRIED rosemary. Would I prefer to use fresh rosemary? You bet. But price and prep time and the painful green fingers I get with fresh means I have to charge more than my customers want to pay. They LOVE my rosemary bread. Here's why- WHOLE rosemary has its flavor inside the leaf/needle. If you stew it out in a soup, much of the fragrance can be released, but its escapes an open pot. If you do not release the flavor inside the leaves/needles, you call it sticks and complain as several reviewers have. YOU MUST CRUSH or GRIND the whole rosemary to release the flavor. I have a coffee grinder that is used just for rosemary. My little Krups grinder handles a full load in 10-15 seconds. Oh, the aroma! Drop it right in the sponge dough. One of my customers could not taste ANY rosemary in a sample I gave her. She makes her own rosemary bread from fresh rosemary grown in her kitchen window. I do that sometimes. All those fresh aromatics lost in drying. Lovely lovely lovely. I call them the soprano notes on fresh herbs. Cannot be beat. The freshly ground rosemary may lack the more volatile (soprano aromatics), but at low cost and in short time you get a strong baritone/bass rosemary flavor. Rosemary, they say, is for remembrance, healing, and ..... chicken. So try grinding or chopping or crushing your WHOLE rosemary. If you have FRESH rosemary, I bet you chop it up. Try FRESHLY GROUND.

This is fully aromatic, dried rosemary. I use it often. It has a robust, beautiful aroma and flavor. I use one of those rotary coffee grinders to make fresh ground rosemary you can sprinkle into your dishes. I never use such a grinder for coffee, since for coffee the grind is not consistent, but for spices like this and seeds, it works wonderfully well.
