how long is the bolt and threads?

The overall shaft is 3/4", with the threads 1/2".

Does this thumb screw come with the other knob for tightening?

It's just the screw as pictured. You tighten by hand by turning the black end of the knob.

Is the threaded bolt piece made from Stainless Steel?

Yes, but I found this was not a standard size for most biminis. The thread did not match.
