Demain, essais sur des couteaux pas mal abîmés ... et éventuellement finition au cuir pour certains ...

I couldn’t be happier with this SHAN ZU whetstone. The build quality is outstanding — solid, heavy, and perfectly grippy on the base so it doesn’t move while sharpening. The dual-grit sides make it easy to get both a razor-sharp edge and a smooth finish. After just one session, my chef’s knife was slicing tomatoes paper-thin again! The stone feels premium, and the included non-slip base and angle guide make it ideal even for beginners. Sometimes I'm surprised when I receive something so well made. The box is beautiful with laser engraving and a log cutout. This helps ventilate the stones if they're still damp when you put them away. The stones are marked with the Shan Zu logo and that just makes this more special. I would think this is a Japanese product with all the attention to detail. The instruction book is adequate but you'll find correct technique on YouTube. The stones are perfectly flat and appear to be of excellent quality but time will tell how they wear. I'm not usually delighted when I purchase an item from Amazon but this set made my day.

The presentation / storage box is quite nice and functional. In my case the 5000 stone is fine, the 1000 stone has one edge that seems to have been damaged. So, they just kept removing marterial until flat but, this has created a stone that isn't symmetrical and compromised. Yet they stuff it in a box and send it out. No care or quality control, would suggest looking at alternatives if quality concerns you.
