Not for cooks! Chefs Only :)
Light-weight and incredible steel profile for professionals who demand quality tools. I've been using this knife for a few days and love the edge retention and accuracy for fine work. This is not a kitchen work horse beater, obviously it belongs in the hands of a Chef. Handle has been great, and it has not become loose as with some reviews. The finish is functional and pleasing. Using it daily has been a great experience. Easy to clean, comfortable grip, well balanced feel, and very good to excellent edge retention thus far. Accurate and steady blade for working Chefs. Highly recommend Mitsumoto Sakari blades.

A beautifully unique and versatile Japanese knife.
This knife was a much different experience compared to every other knife I have bought thus far, positively so. This is the sharpest and most nimble knife I have purchased for my collection. Out of the box it was razor sharp, sharper than every other VG10 blade I have purchased, and the thin 1.6mm blade is perfect to slice through foods without much pressure, paring and carving with precision and ease. It looks amazing, unique with a matte finish on the outer cladded metals, giving you the feel of a carbon knife while maintaining a somewhat nonstick surface. The handle with a white ring collar gives you an elegant Japanese style and look, while the materials give you confidence in its long term durability. Customer service by Mitsumoto Sakari is also very responsive and accommodating. My new favorite knife has also become my weapon of choice.

Nice utility knife
I like this knife alot. It's very good for small tasks. Comfortable in the hand, and looks good. Lightweight, and fairly thin, but feels sturdy. Holds a good edge.

Super quality
The knife came in a nice box and was razor sharp. The blade is wonderfully structured and the heft is very comfortable. Also, the heft is perfectly flush with the tang and the rivets. Excellent piece to present as a gift ( which I did) It certainly looks more expensive than it is. I am tempted to buy another one and keep it myself.

Not a balanced knife.
This is extremely sharp, just ask my fingers! :) but, it is very unbalanced. The handle is much heavier than the blade. I purchased another of this knife in the cheaper version the company makes and it is almost perfectly balanced. I will go with the cheaper design in the future. I would have returned this if I had been able to use it before the return window closed.

Incredible value
Sharp, has a good weight to it. Handle feels great for someone with a medium-large size hand. I strop before use, haven’t really needed to sharpen it yet.

SUSHI CHEF REVIEW
I’m going to be honest here it’s a solid knife for home use but after a couple rounds of sharpening and use in a high end sushi restaurant the edge is chipping small but this is a cheap alternative to a Japanese knife and I will be upgrading to a true Japanese knife. If your a chef looking for a cheap backup this is a solid choice but not as a main option hope this was helpful

It has a perfect grip and balance, the steel is so strong that I couldn't bend it at all. However, the blade doesn't seem to have sharpened properly, it even requires more effort than my old knife that needs to be sharpened. I do like this knife but there’s no replacement option, so I have to return it. I bought another one from Shun, which was 20 bucks more expensive. Hopefully, that one will work.

I’m not a pro chef, but I cook at home most days and am always looking for a good everyday knife. I bought the MITSUMOTO SAKARI 5.5-inch Japanese Paring Chef Knife a few months ago and have used it often. At 5.5 inches, it’s nimble but less versatile than a full chef’s knife. While the knife looks beautiful and worked well at first, I found the handle less ergonomic than I’d like. The tip design also takes some getting used to, and it doesn’t glide as easily as my other knives. Sharpness was solid out of the box but faded relatively quickly compared to others in my drawer. In general, it is a stylish option if appearance is a priority, but not the best choice for heavy daily cooking. Suited for light use or as a secondary knife. Pros: Elegant design, looks great in the kitchen Arrived sharp and ready to use Good size for everyday prep work Cons: Handle isn’t very comfortable for longer use Tip shape makes certain cuts a bit awkward Dulls faster than expected with frequent use
