A matter of taste
I'm not familiar with pickled mustard green, so I have nothing to go by but my very Western taste buds. I can't be objective. I can only say it was mustard "stem," not quite what my recipe called for, and was not a happy experience. Flavors are hard to describe, so I'll just say musty, sweet but not in a good way, slimy and crunchy at the same time. But that's just me, and I hope I haven't offended anyone.
