Teff is the Best!
This is one of my top pick healthy flour choices. its one of the healthier flour to use. I use this flour on its own and also mixed with other gluten free flours. It have a smooth texture with is durable and easy to mix. The package is easily resealable. The taste is very nutty and rich and prefect for injera.

All the richly-nutty flavor, and light texture, of brown Teff, in a versatile Flour format
- I have a wheat allergy (NOT the same thing as Celiac Disease, for those folks who are wondering), so I've tried various alternative to wheat. One of those alternatives is Teff. I've only tried Brown Teff, but I've read that there are a couple of different kinds/colors. This flour is also Brown Teff. - I've had whole/un-ground teff and really enjoy the flavor as well as the fluffy texture it givew to pancakes and baked items, but I've found it difficult to cook the whole Teff correctly so that the bran softens and loses any "grittiness". So, when I saw that Anthony's has teff *flour*, I chose to give it a try. - I have not yet tried this in baked goods, but I've mixed it into my night-time oatmeal, and it has all of the nutty flavor of the whole Teff, but it cooks (and becomes tender) more quickly. Just note that, if you make it as a hot cereal, it needs to be stirred fairly often, since it *is* flour and can get lumpy if not stirred. - Both its flavor and its texture harmonize really well (well, in my opinion, at least!) with almond flour, which is also offered by Anthony's, and oatmeal/oat flour. I personally think it's also good with Carob :) - Nutritionally, I've read that Teff is actually a seed, like Buckwheat, rather than a grain, so its proteins should balance well with grains (such as oats!) and/or nuts. It has a fairly modest glycemic index and decent protein availability, and respectable levels of thiamine, calcium, magnesium, and phosphorus. - Now I'll be looking for additional Teff recipes to try out! =:-D

Not like the usual baking flour
First time user for me. It worked well combined with rice flour and coconut flour. The items that I baked were definitely more dry and crumbled more easily. I think with the tweaking of ingredients the outcome would be better. Good flavor.
