Q: Do you need to update bios for Intel 13th gen?

As far as my knowledge the Z790 boards will support 13th gens out of box. Z690 boards need to be flashed back( Bios Update) to support a 13th gen.

Q: Can I run 64gb of 6400MHz RAM on this motherboard? The Manual doesn't specify 6400MHz support, but a website was saying it's usable after BIOS update?

Go off of the brands website data. That would be the most accurate.

Q: GIGABYTE Z790 IS there a variant with more pcie slots and without onboard video? Goal: Fastest handbrake PC ?

If your after a fast gaming rig, this will do. Things of importance. Pci-x 5, pci-x 4, chipset supports DDr5, capable with 13th gen Itel cpu. Bout it, no need for more pci-x slots as most only support 1 5x, 2 4x and rest 3x. Thins one has a 5x for 4080ti RTX, pci-x 4 for best ssd and 3rd and 4th for anything else like a more affordable ssd for storage. There are no other MBs with more slots but some have for example 2 5x slots ect. Again if you buy a more expensive mb, you will not see much if any performance in Gaming. Provide more info on your planed Rig for additional help. I built mine off this mobo and it hit 24k in 3d mark bench test. That was with only a 4070ti. But the board worked flawless from first boot till now. Not one crash regardless of what it's doing. It also converts video files in a few hours. My previous rig took all night and it was Ryzen 5 and 2060 super.
