So who has tried several brands here? how does this anthony’s compare to noble plate’s meatless crumbles? and to longeve?

I've tried at least three different brands of textured vegetable protein, Anthony's is the only one I've bought twice. I really like this one. It's easy to use, versatile and has the best texture of all of them.

can you make sweet protein bars with this? (thinking with rice crispies, maple syrup, PB?)

I haven't tried but I think you can make protein bars. The textured vegetable taste it's plain

Is serving size for dehydrated or rehydrated?

Based on serving size (1/4 cup) and servings per container (28), I would think it is based on dehydrated.

Does anyone know how to season this as sausage?

One of the specific seasonings that's often in sausage is ground fennel seed - in addition to whatever other spices you like (I'd suggest garlic powder, paprika, and pepper too), the ground fennel seed really boosts the sausage flavor.
