We got them for a back country camping trip and they worked great. Now we are using the rest in baking recipes as a replacement For regular eggs.

We are locked down so only shopping by mail. I miss scrambled eggs so I got these to experiment with. The challenge is to get past the taste, I can tolerate the texture. I helps to have a little bit of chemist in your heart. Again I turned to YouTube and got some ideas. First attempts were with varying amounts quarantine powdered whole milk which really helped. Seasoning is the key. Onion powder is a must ask is ground black pepper. Cooking it right after the bacon helps too. Also realize that this is probably a lyophilized powder and is a bit hydrophobic so it needs a small blender to get it to dissolve entirely in liquid. It also clings to everything it gets near by static electricity so you and all your appliances will be covered. It cooks really fast so if you turn your back on it you have an omelet instead of scrambled eggs so omelets were first. The more you put in them to distract your taste buds, the better. I prefer soft/wet scrambled and that may not be possible with these.....yet. I have yet to try additives like sour cream or cottage cheese to keep it moist (sorry for using "moist"). Until I master the alchemy of powdered eggs I will be using the universal solution for most situations like this.....lots of KETCHUP. There might be better tasting powered eggs out there but I determined to make these work. Would recommend but not for the faint of heart in the kitchen and certainly not for anyone with any degree of OCD.

If the powdered eggs are used for baking, even with the eggs mixed into the dry flour or meal, the breakdown of the lumps is not easy, so sifting, or using a mixer or whisk will be needed to smooth them out.

This sat on my counter for a while before I got the courage to test them out as scrambled eggs. You do need to measure carefully and beat them really well because there are a lot of lumps. Perhaps mixing with a little water first into a paste and then adding the remaining water will resolve that. My first attempt I preheated my skillet and added a good amount of butter. Then I added the reconstituted eggs. It went in like a dry batter type consistency and even though I buttered the pan and preheated it, it stuck and cooked very quickly like most reviews say. The taste was surprisingly good. I still prefer the taste of a fresh egg the best but this is very convenient to have on hand. I can figure out many good uses: baking, pancakes, camping, survival storage (if you vacuum seal the unopened bag I'm sure it will last a very long time). You do have to refrigerate the bag once opened so plan on the space in your fridge. It's a pretty big bag. I think I would buy this again. I would rate it a 4.5 stars.
