Function and Beauty
If Frank Lloyd Wright ever designed a knife, I think he would have come up with something like this. His philosophy to architecture was based on the idea that form should follow function. Likewise, this knife works really well for what it was designed. While, at the same time, it also possesses beautiful aesthetics! The blade sharpens up easily to a razor sharpness and the balance and feel of the knife in my hand is really good. The length (12") and shape of the blade allows it to effortlessly cut through large pieces of meat when breaking it down to more manageable sizes. It does this while giving you great control over the blade. I don't use it often so I appreciate the nice presentation box that it comes in. You can cut meat with any knife but, if you can afford the luxury of having a knife dedicated to breaking down large pieces of meat, this is the knife you should get. Also, this should be a great hit at Thanksgiving for carving a turkey. I think it represents solid value as it is not terribly expensive.

Was a great buy.
I bought this as a token of appreciation for Thanksgiving for one of my employees in a meat market. The blade was super sharp right out of the box. The knife is lightweight compared to the cutting room knives. The blade has some flex but overall is a great cutting knife. It holds an edge well thru breaking down Ribeyes and strips and cutting fillets. And does not take a lot of work to keep it razor sharp. The handle is a bit small but works good enough.

Very sharp knife
This knife is what you would expect at this price. It's sharp and very nice to look at. This is not stainless steel, it is Damascus, so you must keep a light layer of oil on the blade to avoid corrosion. I would prefer a little more weight to the knife, but that is just personal preference. I have only been using it for two months, so I cannot comment on edge retention. Overall, this seems like a solid product. UPDATE: After a year of use, it is still razor sharp. I am glad I purchased this knife.

Very well made and super sharp
This is a quality knife that is well-balanced and super sharp. I primarily cut large pieces of meat into steaks, and it worked much better than my shorter-bladed knives. It was a good purchase and well-packaged, and I will continue to add TUO knives to my collection.

Fast delivery and a great knife. I like to buy whole ribeyes and slice them myself. This knife is perfect for exactly that. Fits the hand nicely, balanced and sharp. Amazing knife for the price.

Update May 11, 2023: I have upgraded my rating to 5 stars. I have now been working with this knife and it has become my go to favourite knite. It retains its edge very well and a few strokes against the honing steel refreshes the blade. I am impressed with the quality. I use it for all things like meat, poultry, vegetables (I can slice tomatoes as thin as paper), shred cabbage - only thing i will not do with this knife is cut bone. I love it too much to torture it. Item arrived the next day by mid-morning. Very prompt delivery. Attractive looking and feels well balanced. Box provided by Tuo is attractive and well appointed. The damascus steel patterns resulting from folding the steel are very light and not pronounced. This is likely due to the higher chrome content over carbon. Second major point for me is that the knife is not razor sharp. The published spec says each side is at 18 degrees for a combined edge of 36 degrees. I would consider anything more that 30 degrees to be on the blunt side. This knife will still easily slice through vegetables in its current state but it is below ideal. Luckily this is easily addressed and rectified by using a high grain japanese wet stone. The test will come to see how well the steel will retain its edge. I will update after periodic use of the knife. I was hoping this knife would become my favourite go to but now I dont feel that will come to pass - not attractive enough and I suspect that with reduced carbon and increased chrome the steel does not have the hardness of traditional japanese knives. Remember, though, that high carbon knives will be prone to rust. You get what you pay for (in most cases). High end damascuss steel knives will run you north of $300. This was slightly less than 30% of that.
