Are bamboo these bamboo leaves dried/need rehydration or fresh and do they need to be washed prior to packing zongzi?

I did not get bamboo leaves myself but by the correct procedure it's should be washed before get dry

Are these leaves from a plant, or from a tree?

They come from the soursop plant which also produced fruit.

Why this product lacks the organic and non-gmo verification seals?

Maybe they were not produced and packed in the US. It’s not easy for small companies to get these certifications. Most local products are organic and non gmo anyways. I don’t think genetic modification is an issue out of the US.
