This is not like Asian fish sauce! Use it sparingly in a good red sauce. It's salty but adds UMAMI. Especially with seafood.

Attractive addition to my kitchen and really tasty as well it is expensive considering alternatives that are more accessible and much cheaper. But honestly I bought this more for the country of origin and as a foray into cooking and a more authentic Roman style. All said I'm glad I got it I love to pull it out and share it with guests.
