Betty Crocker Blueberry Muffin Mix, 6.5 oz (Pack of 9)

I have experimented with different variations of this muffin mix. The one that I really like is to mix two cups of whole wheat flour and two tablespoons of banana cream pudding mix with one package of the blueberry muffin mix and then add enough milk or water to get a thick batter and then bake at 400° F for 20 minutes after pouring the batter into a bread pan. The result is a blueberry loaf that has a milder taste, not the overpowering taste that you get by following the directions on the box. Of course, the blueberry loaf is a little bit denser than the result you get by following the directions on the box for muffins but I like it.

First batch turned out crumbly. Tasted fine but did some research and found that I had likely over stirred which apparently affect the gluten according to Co Pilot AI. Next batch more careful and mixed with water vs milk. I have a no stick pan for these and once out of the oven used blunt knife around the edges. Let sit and cool for ten minute and when came out they were perfect. No crumbling. Hope these tips helpful.

I've not been able to find them in grocery stores, dollar generals or walmarts. On a hunch, I just Amazon searched it and sure enough,they had them. I'm back in business having my blueberry muffins. There are other brands but they are not Betty Crocker.
