This is a nice alternative to soy sauce and great for cooking and seasoning with. I like it for adding flavor to soups and stews and when sauteing fish, but you can use it for just about anything. It's also gluten-free because it's made from just soy beans, unlike soy sauce which adds wheat. Pound for pound it has about the same amount of sodium as soy sauce, but it is much saltier in flavor so you don't have to use very much, which means less sodium in the end. You can also easily dilute it with water if you're looking to lower the sodium content, and it will still add plenty of flavor. Definitely be careful not to use too much...one could even call this a "concentrate." If you're using it for sushi or adding it on top of rice or other foods, I would definitely recommend diluting it with water first. Additionally, being able to dilute it or not needing to use very much to add flavor also helps to make it more economical.
