Since my husband's favorite side dish for everything is green bean casserole I've been experimenting with different mushroom soups and this one is a favorite. I think it works best with salted green beans but if you are on a low-salt diet as I am it is still delicious with unsalted green beans. I also add in a drained can of sliced mushrooms and top it now with a palm-oil free crispy onion topping. I have to say, I despise mushrooms. I can't stand the taste or texture or anything else about them. However, some recipes call for cream of mushroom soup and who am to mess with my mother's recipes? Campbells cream soups are the only cream soups I will buy, and it all started with cream of mushroom soup. For one, it doesn't last like dirt or mud to me, all the others do. I don't have to taste a mushroom to know there is mushrooms in a dish because I instantly taste dirt when I take a bite of the dish. If someone made a green bean casserole with a different brand, I'll know it first bite. But with Campell's the size is always right, the texture is good, it seems that the bits of mushrooms blend into the dish well. The cans have an easy open lid so that makes it easy to use. I like the sodium content as well as it being gluten free. I still only use it if I just have to, but I'm glad it's available to me and I do always keep a couple cans on hand in case I need them. I also keep cream of chicken, cream of celery, etc. It's the only brand I trust.
