Very sharp
This has become one of my go to knifes when I am butchering sub primal cuts of meat. Thru also make a 10 in breaking knife which I use too. The knife is very sharp and high quality. It keeps a edge longer then ones I've used previously. It comes with a plastic sheath to protect the blade. It is very sleek looking and comfortable to hold/use. Price is good for the quality of blade. And it cuts through meat like buttaaaa

My Wife was a professional (Meat Cutter/Butcher) for over 13 years,(Yes she is a Woman)..LOL
I bought these knives for my Wife, who was a professional (Meat Cutter/Butcher) for over 13 years and a in-home chef. Here is her review for all her Dalstrong knives. Hi, I'm reviewing all of my Dalstrong knives. NOTE: I was a professional (Meat Cutter/Butcher) for over 13 years and a in-home chef (yes I am a woman..LOL). I have been looking for another set of knives for a longtime. The proper weight, balance (blade to handle ratio), quality of the steel, edging of the blade (angle of the edge), grip of the handle and the flexibility or stiffness of the blade, depending on the task you are doing. My boning knife (Dalstrong Gladiator Series) is the most important (I do not let anyone else use), and keep in its case. (It's in the picture for viewing purposes, 3rd from the left). The boning knife does its job! It has the proper feel and grip. It has a proper lip at the bottom of the blade to protect your hand from slipping onto the blade. It has just enough flex on the tip to maneuver in and around bones and joints, and just the right amount of stiffness to cut through joints and membranes. The quality and sharpness of the blade is amazing and the construction of the handle is absolute quality workmanship. I highly recommend this knife. As a note, I wish they had a 5 inch boning knife, but they do not.. The rest of my Dalstrong set includes a, 9.5" and 6", Chefs(Shogun Series). First two on the left in the picture. Warning : they are sharp, sharp, sharp! The quality and sharpness of the blade is amazing and the construction of the handle is absolute quality workmanship. The 3rd from the left, in the picture is my boning knife and 4th-10th is for culinary, all (Gladiator Series). The opinion is the same. Warning : they are sharp, sharp, sharp! The quality and sharpness of the blade is amazing and the construction of the handle is absolute quality workmanship. All knives are shipped and packed with protective cases and covers on the tips. (The only one I do not have is the filleting knife, for fish) These knives are NOT meant for the dishwasher or children. The blades are very sharp! (I just glazed the edge with my finger and cut the crap out of myself !!). They're a professional set . These should be hand washed. If you want knives that you put in the dishwasher buy something else!! These are a professional set and should be treated as such!!

Durable, sharp, great product!
I worked as a food inspector and needed a knife. This product works so well in slicing meats. It's very long, and slices around bone and through muscle tissue in a very precise manner. It is made of a material prone to rusting, but with proper oiling and drying of the blade, durability can be maintained. The grip is smooth, and can potentially be a danger if your grip was to slip. Great product!!!

Incredible Quality At Affordable Price
I'm not a professional chef, but you really don't need to be one to recognize quality cutlery and, if you cook regularly, it's worth having a good set of knives. I first started with the Dalstrong Gladiator series several years ago when I upgraded from one of those $99 department store set to one of the Dalstron Gladiator 8-piece block sets. I was incredibly impressed with the quality and ergonomics and have since added two of the four piece knife sets, a breaking knife, a fillet knife, and this boning knife. I'm not sure I'll need any other knives in the future but, if I do, I'll be looking at another Dalstrong Gladiator!

Nice boning knife
The Good: -This is the best/most impressively packaged knife product I've ever had the pleasure of opening. Definitely gift worthy wow factor. -The blade appears to be excellent quality and construction. -The included sheath is very nice to have. -The price is very reasonable for the quality of components used...especially since I purchased while on sale. The not so good: -While the quality of the components used in the construction of the knife appear to be top notch, the fit and finish of the pakkawood handles to the blade's tang is slightly lacking. The handle is the first thing you touch on a knife, and I immediately felt this slight imperfection. I'd trade the fancy packaging for a little more time spent in the quality control of the fitment of the handles. This is the one and only knock I have on this knife, and the only reason I did not give this product 5 stars.

Solid buy.
Love the bigger handle of the gladiator series. I have bigger hands so I get a good grip. Flexible strong blade. Comes super sharp out of the package. Packaging is top notch, btw. They give you a pin, stickers, knife guard. Solid buy

Li consiglio vivamente.

Very nice blade. Glides through filleting pork and steak beautifully. I put it to my diamond steel when it needed a touchup and its almost a scalpel. Heavy handle, flexible blade, well balanced. If I had any complaint it's the amount of packaging and fluff. As a gift, perhaps worth the packaging - which is quite special - but as a kitchen knife, all of the packaging got thrown out. So wasteful given it probably added $10 to the price.

I wanted a boning knife for a while now that is flexible and easy to use. Usage so far has been in deboning a chicken, taking the skin off fish fillets (when required) & taking the main part off a watermelon from the skin. I loved the flexibility of the blade in performing these tasks compared to using one of your standard knives that often doesn't perform well. Also, there is less wastage. What more could one want.
