Q: Does anybody have a problem with high-hydration bread dough sticking?

I agree with Chef Ron. Oil your board with a neutral oil. It's wonderful for high hydration doughs, almost any doughs, except ones that need a damp or dry board.

Q: Is the lip on this board long enough to be stable on a bullnose edge countertop?

I don't think there would be a problem. The lip is 1.5" h x 26" l. Overall length of the board is 28", overhanging if you will an inch on each side of the lip. With the size and weight of the board I don't see an issue.

Q: Has anyone used this for pasta? Does the oil coating it comes with interfere with rolling out the dough?

I have been using this board for pasta and bread making and have found no problem what so ever. I treat it with the recommended oil to maintain the integrity of the board.

Q: What are the maintenance instructions for this board, both for first time use and thereafter, please?

I treated mine 3 times before I ever used it. Then after use, wipe it off and put on another light coat of oil.
